Cook shiitake thoroughly. Trim off the stem of mature mushrooms or use the full mushroom if you bought baby shiitake. Their earthy flavour makes shiitake a great substitute for recipes with wild mushrooms. Oak mushrooms will keep 1-2 weeks in your fridge when stored in a paper bag.
