Tom Kha Paste is made by pounding together tamarind, galangal, shallot, lemongrass, lemon juice, kaffir lime leaves and chilli paste. It is a Thai soup with the distinct Thai flavour of galangal, a rhizome somewhat similar to ginger. Kha means "galangal" in Thai.
